Foodie Friday: Healthy Coconut cookies

So I have been wanting to do a foodie Friday for WEEKS (I mean probably closer to months) but every recipe I tried, was usually an epic failure... until... TODAY! Today I made the most delicious, almond joy cookies. This recipe is seriously amazing on so many levels:
1) Its only 5 ingredients
2) its HEALTHY
3) remove the single chocolate chip and it is #21daysuperherochallenge approved (If you don't know what this means sit tight, next week there will be a very exciting blog post about this)

(by the way I didnt used these chocolate chips i used unsweetend ones but didnt have the bag anymore since they were in an air tight container. the hersheys is just a place holder)
So here it goes
ingredients:
1 & 2/3 cup Unsweetened shredded coconut
2/3 cup crushed almonds (salted or unsalted)
1 can of full fat coconut milk
1/4 cup honey
optional (chocolate chips)
steps:
1) combine coconut milk and honey over medium heat for 20-30 minutes
2) preheat oven at 325
3) Mix coconut mixture, almonds and coconut together
4) Scoop one tablespoon of mixture on cookie sheet (add chocolate chips if you wish)
5) bake for 12-14 minutes
6) ENJOY!
seriously the easiest cookie recipe ever and guilt free to enjoy! The original recipe called for sweetened condensed milk and lets be honest that stuff is seriously JUNK, so many additives and yuckiness, so I had to find my own version and thats where I came up with mixing a can of coconut milk and the honey!
a few modifications I might try next time.... I might try to add an egg just so that they crumble a little less. Also I could do a chocolate drizzle instead of a chocolate chip... anyway you make them they will be amazing!!!

51 calories per cookie... Seriously? how can you even consider that to be a cookie?? haha
