Banana Blueberry paleo bread!

Wow... week 1 of #21daysuperherochallenge has been insane. I have taught 6 classes this week and attended 2 more. On top of the challenge workouts and cutting sugar.... this momma is BEAT! But before I go into the recipe I just have to give a shout out to all the new superhero's fighting through and giving their all. I love their passion and excitement. Its so great to see them all reaching out and supporting each other on the facebook group.
My sweet tooth has been in high gear this week (totally normal when cutting out sugar) and I know that if I didn't satisfy it with something quickly I would totally binge and go off track. I also am working on clearing out our freezers because quite frankly we have too much food in there. So I bring you... paleo banana blueberry bread.
Ingredients
2 bananas
3 eggs
1 TBL coconut oil
1/4 cup coconut milk (full fat)
1/4 cup almond milk
3/4 cup coconut flour
1/2 tsp baking soda
1/2 tsp baking powder
2 tsp of Vanilla
2 tsp cinnamon
2 TBL of pure maple syrup or honey
sprinkle of blueberries
throw everything (except blueberries) into a blender.. then transfer to a parchment lined loaf pan. sprinkle blueberries bake at 375 for 50-60 minutes and you ENJOY!
super easy, only gets one pan dirty and totally hits the spot. Next week I'm going to try subbing out 1/4 of the coconut flour for protein powder so this recipe hits my Macros better... but for now, I will be enjoying my banana bread with a cup of coffee in the morning.
